Ingredients
2 cups of Basmati Rice,
1 cup Mixed Vegetable (cauliflower, potato, carrot, french beans),
150 g Green Peas,
3 finely sliced Onion,
4 Tomatoes,
2 Green Chillies finely sliced,
Salt as per taste,
1 teaspoon Red Chili powder,
2 teaspoon Cinnamon (dalchini), Caraway Seeds(zeera),
4 Cloves (laung),
1/2 tablespoon Black Pepper powder,
3 tablespoon Dry Fruits (cashew nuts, raisin),
1/2 cup Yogurt (curd),
4 tablespoon Vegetable Oil,
1/2 tablespoon Mustard seeds.
Preparation
• After cleaning and washing the basmati rice, pour 3-4 cups of water to it. Put a little salt and 2 cups of dry fruit mixture to it. Then, cook the mixture in a pressure cooker or microwave.
• Cut all the above mentioned vegetables into small thin pieces and then, fry each one of it separately using oil.
• Fry mustard seeds, green chili, cinnamon & caraway seeds, cloves, and black pepper powder in a pan using oil. Add onions and fry till it is pink in colour.
• Then add salt, red chili powder, and chopped tomatoes and fry these stirring.
• Pour finely blended curd to it and stir well. Now, add to it all the above mentioned fried vegetables.
• Now, pour into it the previously cooked rice. Blend these lightly, so that the rice grains do not break. Cook the mixture for approximately 3 minutes.
• Take this Vegetable Biryani out gently in a rice serving dish.
• Garnish aesthetically with dry fruits and green coriander leaves.
• Serve hot with raita and pickle this tasty Veg. Biryani.
